Hot soups are so comforting in the cold season. We found a delicious veggie soup on CBC and we’ve adapted it for you for the best results, with ingredients approved by Medical Medium:

 

Reishi Mushroom Veggie Soup

Ingredients for 6 servings

∙ 1 tbsp olive oil

∙ 1 medium yellow onion, diced

∙ 4 garlic cloves, minced

∙ 2 tbsp fresh ginger, peeled and grated

∙ 2 carrots, sliced 1 cm thick

∙ 1 fennel bulb, diced (keep the fronds to be used later)

∙ 2 cups cremini mushrooms, sliced

∙ 2 cups fresh shiitake mushrooms, sliced (or ½ cup dried)

∙ 6 cups water

∙ ¼ cup reishi powder (1 teaspoon per portion)

∙ 1 tbsp allspice

∙ 1 tbsp thyme

∙ 3 cups kale, chopped

∙ Sea salt and freshly ground black pepper to taste

∙ Fennel fronds, minced

How to prepare it?

▻ Heat the olive oil in a large soup pot over medium heat. Add the onion and saute for 2 minutes. Add the garlic and saute for 1 minute. Add the ginger and the remaining vegetables (except the reishi powder) and saute for another 5 minutes or until golden brown.

▻ Add the water, reishi powder, and dried spices.

▻ Bring your soup to a boil and then reduce the heat to bring to a simmer. Cover and cook for 1 hour. Wilt the kale in the hot soup by stirring it in.

▻ Add salt and pepper to taste. Top with fresh fennel fronds and enjoy!

Dips are great for a quick snack at any time of the day. They make a great breakfast or late dinner on their own, but they are also perfect as side-dishes with more consistent meals.

Reishi powder can be easily incorporated into any mixture and it’s actually a natural flavour enhancer. Even though on its own it has a bitter, earthy taste, it compliments other ingredients very well, creating surprising combinations. Because dips have a homogenous texture, they make it easy for you to add your daily portion of reishi powder.

 

This dip we found on Simple Mills is great with sliced cucumbers, bell peppers, or tomatoes, healthy crackers, or crunchy toast:

Reishi Mushroom and Green Olive Dip

Ingredients:

∙ 1 – 15 oz. can of naturally cured green pitted olives, drained

∙ 1/3 cup almonds, walnuts, pecan, or Brazil nuts

∙ 1 clove fresh garlic, minced

∙ 1 tbsp olive oil

∙ 1 tsp. reishi mushroom powder

∙ 2 tbsp lemon juice

∙ 1/2 tsp. herbs de Provence

∙ 1/8 tsp. white pepper

∙ Parsley for garnishing

Spreads and dips have a lovely creamy texture and they are very versatile - use your favourite ingredients, improvise, and sneak your supplements into your diet

How to prepare it?

▻ Blend all ingredients in a food processor until coarsely chopped. The mix should have a chunky yet emulsified texture. The dip can be stored in the fridge for a couple of days.

Asparagus-Spinach Dip

Asparagus and spinach are low in calories but rich in fibre and vitamins - mix them together, add the right seasoning and enhance the flavours with a teaspoon of reishi

Ingredients:

∙ 1 ½ cups trimmed and roughly chopped raw asparagus

∙ 5 cups tightly packed spinach

∙ ½ cup cherry tomatoes

∙ 1 garlic clove, roughly chopped 

∙ 2 ½ tbsp freshly squeezed lemon juice

∙ ¼ cup loosely packed fresh cilantro leaves

∙ ¼ cup loosely packed fresh basil leaves

∙ 1 tbsp raw honey or 2 pitted Medjool dates

∙ ¼ to ½ tsp cayenne or red pepper flakes

∙ 1 tsp reishi powder

How to prepare it?

▻In a food processor, blend asparagus, spinach, tomatoes, garlic, lemon juice, cilantro, basil, raw honey or dates, and cayenne or red pepper flakes. You can also use a blender if you don’t have a food processor. There will be a difference in consistency, but both are delicious.

▻Using a spatula, scrape down the sides as necessary. Process until smooth and creamy, but still retaining a little texture, for 2 to 3 minutes.

▻Serve immediately with raw vegetables like bell pepper wedges (red, yellow, or orange), cucumber slices, carrot sticks, celery sticks, or lettuce leaves.

Alternatively, you can serve the dip as a soup or stuff it into tomato halves or as sauce for steamed potatoes. Enjoy!
